Super easy French onion soup au gratin

I love cooking, but when the baby hasn't slept, and we're both sick, I look for hearty, healthy stuff to get me through. Soups are always much easier than people think they are, and that's one of the reasons I love making them. Today I made this French onion soup and only needed to buy some cheese for the gratin.
4 Onions, halved then sliced
2 tbs both butter and olive oil
1/4 to 1/2 cup brandy
4 cups beef stock
1/2 teaspoon thyme
salt and pepper to taste
grated Gruyere cheese and crutons
Slice onions and in large pot, melt butter and olive oil together. Add all the onion and salt and pepper. Over medium heat, saute onions for 20-30 minutes until they caramelize and become very soft, sweet and fragrant. Add brandy to deglaze the pan, followed by thyme and beef stock. Cook for another 20 minutes.
When ready to eat, turn on your broiler and place soup in handled soup bowls and arrange on cookie tray. Top with crutons (I like the Ace Bakery sea salt and olive oil ones, myself) and grated cheese. put under broiler until cheese is bubbling and brown.
